On The Go Recipe: 3 Ingredient Peanut Butter Bars

Today, we want to talk about something that lots of women in our community struggle with: eating healthy and nutritional meals when they’re busy. Earlier this week, we shared our top tip for this: Meal prep & batch cooking. Batch cooking allows you to prep healthier meals ahead of time, making it that much easier to eat well over time, even when you’re tired and busy.

So naturally, we’re sharing our first On The Go recipe, 3-Ingredient Peanut Butter Bars — a perfect breakfast or snack staple that you can batch cook in advance and eat throughout the week! They take just 5 minutes to prep and 5 minutes to cook — and you’ll get 12 bars.

Recipe: 3-ingredient peanut butter bars

There’s nothing fancy about these breakfast bars, but these 3 simple ingredients are a trio made in heaven. They’re rich in plant-based protein, B vitamins, folate, and magnesium, these breakfast bars will give you the energy you need. We recommend eating alongside some fresh strawberries for an antioxidant boost.

What you’ll need (makes 12 bars):

  • 3 cups of old fashioned oats

  • 1.5 cups of peanut butter

  • Half a cup of honey

Here's how to make it:

Time: 5 minutes to prep & 5 minutes to set

  1. Line a medium baking dish with waxed baking paper.

  2. Melt peanut butter and honey (or agave nectar for a vegan option) in a saucepan over medium-low heat. Add oats and stir thoroughly to combine.

  3. Tip the mixture into the baking dish and allow it to cool in the refrigerator.

  4. Cut into squares, circles or whatever shape strikes your fancy, and enjoy with a side of strawberries!
