On The Go: Chunky Monkey Trail Mix Recipe

Recipe: Chunky Monkey Trail Mix Recipe

Prep time: 5 minutes | Cook time: 10 minutes | Servings: 12

This is a great recipe to have on hand as a healthy, easy snack to have on-the-go. It's a homemade mix of nuts, coconut, and banana chips that will provide energizing nutrition to help you through midday fatigue. If you choose to use Brazil nuts in this recipe, you'll also be adding a fantastic source of selenium to your day, which is critical for healthy thyroid function. 

What you’ll need:

  • ¾ cup of raw cashews or almonds

  • ¾ cup unsweetened banana chips

  • 1 TBSP coconut oil

  • ½ tsp vanilla extract

Here's how to make it: 

  1. Preheat your oven to 350˚F / 170˚C.

  2. Add nuts and coconut flakes onto a lined baking tray and roast for 10 minutes.

  3. Melt the coconut oil, honey, pinch of salt, and vanilla in a saucepan over low heat.

  4. Remove nuts from the oven and allow to cool slightly, then add to a large mixing bowl.

  5. Pour the coconut oil mixture over the nuts and coconut, and add the chocolate chips. If the nuts are still warm, the chocolate will melt, creating delicious trail mix chunks.

  6. Flip the mixture out onto baking paper and leave it in the fridge to set - about 20 minutes.

  7. Remove from the fridge and store in an airtight container. Enjoy as a snack when you need a quick energy boost!

A quick tip: You can eat the mix warm, though will be best enjoyed after it's had a chance to set and cool slightly.
